Baked French Toast with Berries

Indulge yourself this weekend with this delicious French toast. It’s seasoned with cinnamon and topped with berries

Ingredients:

  • 2 teaspoons butter
  • 4 eggs
  • 1 cup milk (fat free, 2% or whole)
  • 3 tablespoons sugar
  • 2 teaspoons vanilla
  • 1/2 teaspoon ground cinnamon or 1/4 teaspoon ground nutmeg
  • 6 (3/4-inch-thick) slices whole grain bread
  • 2 cups fresh berries of your choice (sliced strawberries, blueberries or raspberries)
  • 1 tablespoon maple syrup or honey

Directions:

  1. Preheat oven to 425°F.
  1. Use butter to thinly coat the entire top surface of a large cookie sheet. Set aside.
  1. In shallow dish, use a fork or wire whisk to beat eggs until combined.
  1. Stir milk, sugar, vanilla and cinnamon (or nutmeg) into eggs.
  1. Soak a bread slice in egg mixture for 30 seconds, and turn to coat the other side for 30 seconds. Place on prepared cookie sheet.
  1. Bake bread, uncovered, for 12 to 15 minutes or until lightly browned.
  1. Turn bread over. Bake, uncovered, for 4 to 8 minutes more or until golden brown.
  1. Meanwhile, in medium bowl, stir together berries and maple syrup (or honey).
  1. Serve bread hot topped with berries.
