Prep Tip: For the chicken, use leftover, frozen or canned chicken. If you have leftover, cooked chicken, remove the skin and bones, and shred the meat.

For frozen chicken, look for fully-cooked, shredded chicken breast in the freezer case of your grocery store. You’ll need about 6 ounces for this recipe. Or, for canned chicken, purchase one 9.75-ounce can of white and dark chunk chicken in water, and then drain it before using.

For a change of pace: Substitute 3/4 cup of dried tart cherries or raisins for the fresh fruit. Or, add 2 teaspoons of curry powder or 1/8 teaspoon crushed red pepper flakes to the yogurt mixture in Step 1.

Yogurt lightens the orange-mayonnaise dressing in this refreshing salad made from chicken, fresh fruit and celery. Since many fruits, or even dried ones, work well in this salad, use the one that looks good at your local market.

Ingredients:

  • 1/4 cup plain, fat-free Greek yogurt or plain low-fat yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup chopped red onion or sliced green onions
  • 1 tablespoon frozen orange juice or pineapple juice concentrate, thawed
  • 1/2 teaspoon garlic salt
  • 2 cups chopped, cooked chicken
  • 1 1/2 cups chopped fresh fruit of your choice (nectarines, plums, apples, pears, pineapple, blueberries and/or strawberries)
  • 1 cup chopped celery
  • Lettuce leaves (optional)

Directions:

  1. In medium bowl, stir together yogurt, mayonnaise, onion, juice concentrate and garlic salt.
