Chicken Fruit Salad

Yogurt lightens the orange-mayonnaise dressing in this refreshing salad made from chicken, fresh fruit and celery. Since many fruits, or even dried ones, work well in this salad, use the one that looks good at your local market.

Ingredients:

  • 1/4 cup plain, fat-free Greek yogurt or plain low-fat yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup chopped red onion or sliced green onions
  • 1 tablespoon frozen orange juice or pineapple juice concentrate, thawed
  • 1/2 teaspoon garlic salt
  • 2 cups chopped, cooked chicken
  • 1 1/2 cups chopped fresh fruit of your choice (nectarines, plums, apples, pears, pineapple, blueberries and/or strawberries)
  • 1 cup chopped celery
  • Lettuce leaves (optional)

Directions:

  1. In medium bowl, stir together yogurt, mayonnaise, onion, juice concentrate and garlic salt.
  1. Gently stir in chicken, fruit and celery. Serve on lettuce leaves, if desired.
