Roasted Brussels Sprouts with Apple and Ham

With apples for sweet and ham for savory, this vegetable- and fruit-packed entrée is a taste sensation.

Ingredients:

  • 12 ounces fresh Brussels sprouts or 1 package (10- to 12-oz.) frozen Brussels sprouts
  • 2 cooking apples (such as Granny Smith, Idared, Northern Spy, Rome Beauty, Stayman, Jonagold, Pink Lady, Golden Delicious, Melrose or Mutsu)
  • 1/2 large red onion, peeled and thinly sliced
  • 2 tablespoons vegetable oil
  • 1 (1/2-inch thick) boneless ham steak, cut into 3/4-inch pieces (about 8 oz.)
  • 3 tablespoons honey mustard
  • 1/4 teaspoon pepper

Directions:

  1. Preheat oven to 425°F.
  1. If using fresh Brussels sprouts, cut away bases and stems. Remove any loose outer leaves. Cut Brussels sprouts in half.
  1. Cut away apple cores (or tough centers). Cut each apple into 8 pieces.
  1. Line 15- x 10- x 1-inch baking pan with foil.
  1. Place fresh or frozen Brussels sprouts, apple pieces, and onion in prepared pan. Drizzle with oil. Gently stir until all ingredients are coated with oil.
  1. Bake, uncovered, for 15 minutes. Remove pan from oven.
  1. Stir ham and mustard into the vegetable mixture. Sprinkle with pepper.
  1. Bake, uncovered, for 10 to 15 minutes more or until sprouts are tender. Serve immediately.
